When it comes to heart conditions, valve disease is very serious, since it impacts one of the biggest arteries in the body: the aorta. Aortic stenosis is when the valve between the lower left heart chamber and the aorta cannot open fully. Because of this, blood fl ow from the heart to the aorta is reduced or blocked altogether, forcing the heart to work harder to pump blood to the rest of the body. If left untreated, aortic stenosis can lead to heart failure, stroke, blood clots, bleeding, irregular heartbeat, infections that affect the heart, or even death.
Aortic stenosis was typically only treated with open-heart surgery, requiring long hospitalization, posing a greater risk of infection, causing more pain and requiring a longer recovery time. Currently, specialists from MemorialCare Heart & Vascular Institute at Saddleback Medical Center, including Dr. John Bahadorani, Dr. Michael Gault, Dr. Cheng-Han Chen, Dr. Jeffrey Altshuler, and Dr. Colin Joyo, are performing a minimally invasive procedure called Transcatheter Aortic Valve Replacement (TAVR) to treat aortic stenosis.
TAVR replaces a damaged aortic valve by implanting a catheter through an artery in the groin or chest and replacing the artery without ever needing open heart surgery.
“TAVR is a low risk, minimally invasive procedure that allows the aortic valve in your heart to be replaced with a new valve, all while your heart is still beating,” says John Bahadorani, M.D., FACC, FSCAI, interventional cardiol-ogist, MemorialCare Heart & Vascular Institute at Saddleback Medical Center.
“TAVR is a good treatment option for those with severe aortic stenosis. Patients at intermediate or high risk, or those not suitable for open-heart surgery, should speak with their doctor to determine if TAVR might be the right treatment for them.”
Dr. Bahadorani is a board-certified interventional cardiologist, well-versed in the opening of blocked blood vessels with minimally invasive catheter procedures. He devotes his time to treating patients, and teaching other cardiologists what he has learned from his many years of experience.

Do you ever wonder why a 70-year-old person may not look a day over 40? Conversely, we have all met the 40-year-old who sadly looks 70.
We are pretty clear on how to age more rapidly than we should e.g., alcohol, tobacco, drugs, fast food, and sodas. But why are we less aware of how to stay young?
Why is it okay to diplomatically receive the answer, “…it’s a part of aging” when you ask your physician “Why am I always tired and have no energy?”
Wellness, youth, what does it mean? Self-esteem? Energy? Low Stress? Quality sleep? Firm and glowing skin? A happy mood? Thick and shiny hair? Strong bones? A fit body? Quality sex? A positive outlook on life? It’s all of the above and it is achievable. However, it takes patience, persistence, and time.
It is an erroneous belief that youthfulness is unattainable and that it is inevitable to spend the golden years of life dilapidated and chronically ill. This myth has been disproven. When Karen Mauro talks about her partner Jim Espinosa, there’s laughter in her voice. And happiness. And most definitely love. “Jim’s a joy to be with. I just love him,” she says, with her signature North Carolina chuckle.
That’s the beauty of life at The Covington, an ECS senior living community in South Orange County’s Aliso Viejo – that two people can find love in their 80s and live a rich, vibrant life together within an outgoing and active community. This is a story of Karen and Jim. But it’s also about the indelible connections residents at The Covington make with one another, and how that makes for a very lovely life.
But, first, let’s back up.
Karen, a former nurse, marriage and family therapist, and religious educator, and her late husband Tom moved into The Covington in 2017. Tom was a family physician who loved to play beach volleyball and travel the world. But his health and memory were in decline and Karen knew it was time to make a move.
“I had heard about The Covington through friends who had convalesced here after surgeries,” says Karen. “Everyone said it was the most fabulous place they had ever been – the care, the food; they couldn’t praise it enough.”
“One day, I received bad news regarding a blood test. The report turned out to be erroneous, but nevertheless, it got me thinking: what if I go first? What’s going to happen to Tom? What’s going to happen to our kids?” So Karen made the decision to leave the ocean views of Laguna Beach for the mountain views of The Covington. It ended up being one of the best decisions of her life, she says.
“When I moved to The Covington, it was such a relief to be there. I was personally falling apart as a caregiver and Tom needed more care than I could give him on my own,” says Karen. “The nurses, doctors, and Chaplin here did a tremendous amount to help me get back on my feet.”
At first, Karen and Tom lived together in The Covington’s independent living. After six months, however, Tom moved to The Covington’s full-time memory care facility. Sadly, Tom passed away in April 2018.
But there was a silver lining, Karen says. She met other couple friends at The Covington who were going through a similar experience – one spouse in declining health, the other serving as a caregiver. The friends became informal support group for one another and the powerful connection has endured. “We all support one another, we all understand. And we’re all so thankful that we’re here.”
After Tom’s passing, Karen kept busy. She participated in exercise classes, became president of the resident’s association, and was active in The Covington’s social life.
Two years later, Jim, a former businessman and avid golfer, moved into The Covington. Because of her involvement in the Resident’s Association, Karen knew just about everyone in the community. So, when she noticed the new face at The Covington, she introduced herself. Turns out, Jim’s best friend was one of Tom’s best friends, and they had a lot of the same friends in common.
Soon, Karen and Jim were attending the same exercise classes and Monday Night Football gatherings in The Covington’s lounge. Karen invited Jim to a few events at The Laguna Playhouse, of which Karen is a supporter. After one such event, Jim and Karen went out to dinner and got to know each other better. When they returned to The Covington, Jim gave Karen a little kiss. The rest, they say, is history.
“The two of us thrive on each other,” says Karen. “Jim’s attitude toward life is very positive. He’s one of those people who builds others up.” When asked how he’s doing, Jim’s trademark reply is, “Never been better.” His optimism and warmth make him a friend to many.
Together, Karen and Jim have traveled all over the States, meeting one another’s families and college friends. They’re a fixture at The Covington gatherings, frequently attend off-site events around Orange County – and they still go to exercise classes together.

One of the things that initially drew Karen to The Covington was the vibrant lifestyle. Because, although her husband’s health was failing, Karen was active and wanted a lifestyle to match. She found it here.

Usually when my husband and I travel, we’d use the verb “schlep” to describe the general disarray that accompanies our family of four.
Especially if we’ve got the teens in tow - cruising in and out of hotel rooms, or fiddling with yet another key code for a private rental. Nothing could be further from the verbiage I’d use to attempt a recap of our recent stay at La Jolla’s Grande Colonial Hotel. Beverly first came to America from the Philippines in 2009. Shortly after she met her husband, Michael while she was working at the Nordstrom cosmetics counter in Fashion Island. Beverly & Michael married in 2017 in a romantic beach ceremony at the El Nido Resort in the Philippines. Mike sold his previous company, an electronics & materials test lab, in 2015 and they wanted to start a new business together. After seeing the episode on SHARK TANK® featuring the original founder of Hammer & Nails, they decided to open the first HAMMER & NAILS Franchise in Orange County in Laguna Niguel and just celebrated their 4th anniversary for the shop.

At The Covington, an ECS senior living community in South Orange County’s Aliso Viejo, holiday meals are an opportunity to create cultural experiences for residents.
The Covington is home to residents of many faiths. Holiday meals are a chance for residents to celebrate their faith and culture with others through food.
“There are multiple religious beliefs here at The Covington,” says Javier Sarmiento, Dining Services Director at The Covington, whose hospitality background includes The Four Seasons and Hilton Hotels. “So, when there’s a religious holiday, we try to accommodate as much as we can by creating delicious meals that are typical for that celebration.”
Holiday meals at The Covington are frequent throughout the year, and include Seder dinner for Passover and Chinese New Year.
“Our Executive Chef, Mike Desimone, is great at coming up with different dishes that accommodate our residents,” says Sarmiento. “It’s something we’re really proud of – attention to detail.”
Resident reaction is what makes it all worth it.
“Our residents are really appreciative of our dinners,” says Sarmiento. “I’m surrounded by an extremely talented team and it is really gratifying to be able to host meaningful celebrations like this for our residents.”
It’s not just the Culinary Team at The Covington that helps make these holiday meals happen. The resident Dining Services Committee plays a large role, too. “Our Committee is comprised of approximately 25 residents, but anyone can come to the meetings,” says resident Barbara Peck, Chair of the Dining Services Committee. “The purpose is to have an open, on-going conversation with our chefs, and to share comments and suggestions,” says Peck. “They’re always agreeable with what we have to say and open to ideas we have for upcoming events.”
The Committee gathers monthly, along with Sarmiento, Desimone, and the Dining Room Services Manager, Gerardo Guerrero. The group discusses upcoming celebrations and menu options. It takes about 2-3 weeks to execute a holiday meal, from ordering food, testing menus and tasting dishes, and making sure the meals look great on the plate. Depending on the number of residents who are attending a particular holiday dinner, the celebrations occur in The Covington’s variety of dining venues and event spaces such as the Grand View formal dining room, the Lounge, or Schumacher Hall.
These holiday meals are in addition to the approximately 11,500 meals The Covington’s Culinary Team executes each month.
“Food is a very important part of life at The Covington, and it’s done very well,” says Peck.
Part of what makes the meals at The Covington so delicious are the high-quality ingredients used by the Culinary Team.
Meals feature hormone-free poultry and beef that is USDA Choice or better. Santa Monica Seafood delivers fresh seafood twice weekly and selections are made per the Monterey Bay Aquarium Seafood Watch guidelines. Locally sourced produce is always a priority to support nearby farmers and the region’s economy.
At one particular Committee meeting, a resident requested the Culinary Team bring back the Triple Chocolate Cookies, which had been phased out because of pandemic-related supply chain issues. “Sure enough, that same week, we had Triple Chocolate Cookies back on the menu,” says Peck. “Sometimes it’s the little things.”
“We normally wouldn’t be able to accommodate a request like this so quickly because of ingredients being on back order, so we got creative and had our pastry chef make the cookies from scratch,” says Sarmiento. “Whatever it takes.”
Another way residents are able to stay in touch with the Culinary Team at The Covington is through comment cards in each of the dining rooms. The cards give residents an opportunity to share their feedback on a particular dish or meal. “It helps motivate our team when we hear positive comments,” says Sarmiento. “And it gives us a chance to course-correct when we receive not-so-great comments. We want to hear it all.”
The Culinary Team occasionally receives handwritten recipes on the comment cards, a nice insight into residents’ tastes, memories, and passions. “Chef Desimone will take the resident’s recipe, work on it, and figure out how to implement it into our menus,” says Sarmiento. One such menu offering is called Grandma’s Favorite Meatloaf.
But while faith-based meals are an important aspect of life at The Covington, so, too, are the events that are simply a great time. These events add an extra air of festivity to an already active social life at The Covington. Events include luaus, barbecues, and even an Elvis Presley Night. “Whether it’s religious or not, we try to be very creative with what we do,” says Sarmiento.
Oktoberfest 2022 was a huge success and a lot of fun for residents. “The Dining Committee met with the Culinary Team, and we asked them to serve drinks and appetizers that would be found at a traditional Oktoberfest,” says Peck. “So, they brought in kegs of German beer, pretzels with cheese sauce, and bratwurst. It was a lot of fun.”
“The main point is to be able to give the residents a great experience,” says Sarmiento. “That’s what we’re here for.”
