As a seafood aficionado, I was in seventh heaven with the menu offerings at Mustangs & Burros. From the Baja Shrimp bacon-wrapped and enhanced with tamarind BBQ to the shrimp ceviche and pan-seared salmon which arrives with roasted potato, street corn salsa, charred lemon and arugula, there were no shortage of options to tempt my palate. A straight meat-and-potatoes man, Tim opted for the grilled-to-perfection hanger steak with wild mushrooms and onions. Fan of chips and salsa as a starter? Not-to-be missed is the eatery’s charred verde salsa and a house-made guacamole.
Sip the night away from a seat at Estancia’s wine bar, savor a cup of coffee and a good read in the garden, take a refreshing dip or bask in the sun poolside with fruity cocktail or fruit-infused water in hand. Al fresco, all luxury, all day.
